Seasonal Snow Crab Stew: A Taste of Freshness
Hello everyone! This is ‘Eegeupsik’. Today, we’re going to make a delicious stew using fresh snow crabs that are in season. This stew is known for its wonderfully refreshing and slightly spicy broth, paired with tender, succulent crab meat. It’s the perfect dish to enjoy with a bowl of rice! Ingredients (Serves 60)
- Fresh live snow crabs 5kg
- Squid 2kg
- Korean zucchini (aehobak) 4
- Onions 3
Seasoning and Broth Ingredients
- Doenjang (soybean paste) 300g
- Gochujang (red chili paste) 300g
- Minced garlic 100g (approx. 8-10 Tbsp)
- Coarse sea salt 100g (adjust to taste)
- Coarse black pepper 50g (or whole peppercorns)
- Fish sauce 100ml
- Basic broth 40L (made from anchovies, kelp, vegetable scraps, etc.)
- Doenjang (soybean paste) 300g
- Gochujang (red chili paste) 300g
- Minced garlic 100g (approx. 8-10 Tbsp)
- Coarse sea salt 100g (adjust to taste)
- Coarse black pepper 50g (or whole peppercorns)
- Fish sauce 100ml
- Basic broth 40L (made from anchovies, kelp, vegetable scraps, etc.)
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the Korean zucchini about 1cm thick into half-moon or fan shapes. Peel and chop the onions into large square pieces.
Step 2
Clean the snow crabs under running water and prepare them. Remove the carapace and innards, then cut them into 2-4 serving pieces. Discard any sharp shell pieces, and set aside the claws and legs.
Step 3
Use the reserved claws and legs, along with kelp, anchovies, and any vegetable scraps you have (like radish peels or leek whites), to make a flavorful broth. Once the clear broth is ready, strain out the solids. In a pot, combine the minced garlic, doenjang, and gochujang, and dissolve them well before bringing to a simmer.
Step 4
Once the broth is boiling vigorously, add the prepared squid and snow crabs. Skim off any foam that rises to the surface as it cooks; this will keep the broth clear and clean. Continue to simmer, removing foam periodically, until the crabs are cooked through.
Step 5
When the crabs and squid are mostly cooked, add the prepared zucchini and onions. Season the broth with coarse sea salt and fish sauce to taste. Finally, add a generous amount of coarse black pepper for a spicy kick and rich flavor, completing your delicious snow crab stew.
