Main Ingredients
  • 1/4 head Napa cabbage kimchi, cut into bite-sized pieces
  • 1 onion, thinly sliced
  • 1 stalk green onion, sliced diagonally
  • 200g Spam or Luncheon Meat, cut into bite-sized pieces
  • 2 frankfurter sausages, sliced diagonally
  • 2 slices processed cheese

Cooking Instructions

Step 1

First, let’s prepare the vegetables that form the base of this delicious stew. Peel and thinly slice the onion. Wash the green onion, then slice it diagonally – the green parts for aroma, and the white parts for a subtle sweetness.

Step 2

Next, we’ll prepare the kimchi, which adds both a satisfying crunch and a depth of flavor. Cut the kimchi into bite-sized pieces, making sure they’re easy to eat in one go.

Step 3

Now, it’s time to elevate the kimchi’s flavor. Heat a pot over medium heat, add the chopped kimchi, 1 tablespoon of red pepper flakes, 1 tablespoon of tuna extract, and 1 teaspoon of minced garlic. Drizzle in 1 tablespoon of olive oil and sauté the kimchi until it softens slightly. This sautéing step is key: it removes any raw flavor from the pepper flakes, deepens the overall seasoning, and preserves the kimchi’s pleasant crunch, resulting in a far more delicious Budae Jjigae.

Step 4

While the kimchi is sautéing, let’s get the Spam and sausages ready. Slice the Spam or luncheon meat into bite-sized pieces, similar to the kimchi. For the frankfurter sausages, slice them diagonally to make them visually appealing.

Step 5

Next to the sautéed kimchi, we’ll artfully arrange the prepared Spam and sausages. This is where the stew starts to look truly abundant and inviting.

Step 6

Now, arrange the sliced onions and diagonally cut sausages beautifully around the sautéed kimchi, Spam, and sliced sausages in the pot. The vibrant colors of the ingredients coming together create a mouthwatering presentation.

Step 7

Finally, pour in 700ml of kelp broth for a rich and savory base. Bring the stew to a boil over high heat. Once it’s bubbling vigorously, generously scatter the diagonally sliced green onions on top, followed by two slices of processed cheese. As the cheese melts, it will enrich the broth with its creamy flavor. And just like that, your Budae Jjigae is ready to be enjoyed! Serve it hot and savor every delicious spoonful.
