  • 1/5 medium zucchini (approx. 50g)
  • 2 pinches of salt
  • 1 Tbsp mirin (rice wine)

Cooking Instructions

Step 1

First, crack 6 fresh eggs into a bowl. Gently whisk them with a fork, removing the chalazae (the white stringy bits). You don’t need to whisk vigorously.

Step 2

Add 2 pinches of fine salt to season the egg mixture. Salt helps to remove any eggy smell and enhances the flavor.

Step 3

For a smooth and tender texture without any unpleasant odor, stir in 1 tablespoon of mirin (rice wine) and mix well. This step makes the egg mixture even softer.

Step 4

Wash the zucchini thoroughly, then slice it thinly into half-moon shapes or long, thin strips. If the slices are too thick, the egg roll won’t roll properly, so slicing them thinly is crucial. Removing the seedy core will improve the texture.

Step 5

Now, let’s start making the egg roll. Heat a non-stick frying pan over medium-low heat. Dip a paper towel in cooking oil and gently spread a thin, even layer of oil across the entire surface of the pan. Insufficient oil can cause the egg to stick or tear.

Step 6

Pour about 1/3 to 2/3 of the prepared egg mixture into the heated pan and spread it thinly. Once the egg is almost set and the surface is slightly firm, carefully start rolling it about 2/3 of the way using chopsticks or a spatula, as if making a sushi roll. Do not add the zucchini yet.

Step 7

After rolling the egg about 2/3 of the way, gently push the rolled portion to one side of the pan. Lay the thinly sliced zucchini over the exposed surface of the pan, then pour the remaining egg mixture over the zucchini and continue rolling. This method ensures the zucchini is evenly distributed within the egg roll, making it look more appealing.

Step 8

Continue to cook the egg roll by turning it gently on all four sides until it’s fully cooked and has a beautiful shape. Rolling it with a sushi mat can help achieve a round and neat appearance. Be mindful of the heat to prevent burning.

Step 9
