  • 3 large eggs (for hard-boiling)
  • 3 tsp butter (softened for easy spreading)
  • 4 Tbsp mayonnaise (for creaminess and flavor)
  • 1 Tbsp whole grain mustard (adds a tangy kick)
  • 1 tsp salt (to taste)
  • 1/2 tsp black pepper (adjust to your liking)

Cooking Instructions

First, let’s hard-boil the eggs. Place the eggs in a pot and cover them with a kitchen towel to prevent them from rolling around while boiling. Add enough water to cover the eggs completely. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for about 15 minutes. Once cooked, immediately transfer the eggs to an ice bath to cool completely. This step is crucial for easy peeling.

Once the eggs are cool, peel them carefully. In a mixing bowl, add the peeled eggs, 1 tsp of salt, 4 Tbsp of mayonnaise, 1 Tbsp of whole grain mustard, and 1/2 tsp of black pepper. Use a fork or a potato masher to gently mash the eggs until they are mostly broken down but still have a slight texture. Mix thoroughly with the other ingredients until well combined. A few small chunks are perfectly fine!

Now, let’s assemble the sandwiches. Take your 6 slices of bread. Spread a thin, even layer of softened butter on one side of only 2 of the slices. The butter adds richness and prevents the bread from becoming soggy.

Top with another slice of bread (unbuttered side down) to complete the sandwich. Cut each sandwich into 4 equal pieces for easy handling and serving.
