  • 4 Tbsp gochujang (Korean chili paste)
  • 4 Tbsp peanut butter
  • 4 Tbsp jo-cheong (rice syrup)

  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1.5 Tbsp minced garlic
  • 1.5 Tbsp toasted sesame seeds
  • 1.5 Tbsp sesame oil

Cooking Instructions

Step 1

Prepare the dried shredded squid. Place the squid in a zip-top bag. Lightly spray water onto the squid about 5 times using a spray bottle. Close the bag and shake gently. This step helps to rehydrate the squid, ensuring it stays tender and chewy when stir-fried. It’s crucial for preventing the squid from becoming tough.

Step 2

Let’s make the delicious sauce! In a frying pan, combine the peanut butter, rice syrup, gochujang, gochugaru, cooking wine, and minced garlic. Place the pan over medium heat. Stir continuously with a spatula for about 2 minutes, ensuring the sauce is smooth and well-mixed without any lumps.

Once the sauce is made, remove it from the heat and let it cool down slightly. Adding the squid to a very hot sauce can cause it to lose moisture and become tough. Waiting until the sauce has cooled to a warm temperature is the secret to achieving a tender texture.
