Simply pan-fry fish cakes with various vegetables and egg for an easy and delicious dish. It’s a perfect way to use up leftover vegetables and make a delightful side dish or snack.

- 3 sheets thin fish cakes (eomuk)
- 1/2 onion
- 1/3 carrot
- 1 handful mini king oyster mushrooms (approx. 5-6)
- 2 eggs

Step 1
First, wash and prepare all the vegetables. Peel the onion and carrot. For the thin fish cakes, you can roll them up like a sushi mat and slice, or fold them before slicing for a prettier shape. Finely mince the fish cakes, onion, carrot, and mini king oyster mushrooms. Mincing them finely makes them easier for children to eat and improves the texture. If you have a food processor, feel free to use it.
Step 2
In a large bowl, crack the 2 eggs and add the 1/4 tsp of salt. The salt helps to enhance the flavor and balance the overall taste, while also masking any eggy smell. Gently whisk the eggs with a fork until smooth for a more delicate flavor.
Step 3
Add the minced fish cakes and vegetables to the whisked egg mixture. Stir well with a spoon or spatula to ensure all ingredients are evenly coated with the egg. Make sure there are no clumps. This mixture will be your pancake batter.

Heat a pan over medium heat and add a generous amount of cooking oil. Using a ladle or a tablespoon (about 2 tablespoons worth), scoop the batter and place it onto the hot pan. Form them into small, round, flat pancakes. Avoid overcrowding the pan; cook in batches according to the pan’s size.

Cook over medium-low heat. Once the bottom side is golden brown and cooked, carefully flip the pancakes using a spatula. Gently press down on the pancakes with the spatula as they cook. This helps them to cook through evenly and achieve a crispier texture.
