Simple Egg Fried Rice (Ryu Soo-young Style)
Ryu Soo-young’s Super Easy Egg Fried Rice Recipe from ‘Stars’ Top Recipe’
I used to think he was just a handsome actor who was good at acting, but it turns out he’s also a great cook! Ryu Soo-young… haha. While I don’t watch it often, ‘Stars’ Top Recipe’ is one of the shows I occasionally tune into. Today, I tried making Ryu Soo-young’s super simple egg fried rice – the simpler, the better!
Ingredients
- 2 bowls of cooked rice
- 3 eggs
- 1 green onion (mostly the white part)
Seasoning
- 2 Tbsp anchovy sauce
- 2/3 Tbsp brown sugar (adjust to taste)
- 1/3 Tbsp sesame oil
- A pinch of toasted sesame seeds
- 3 Tbsp cooking oil
- 2 Tbsp anchovy sauce

Cooking Instructions
Step 1
Generously pour 3 tablespoons of cooking oil into a wide pan. Add the chopped green onion and stir-fry over medium-low heat until fragrant and lightly golden. It’s important to cook the green onion thoroughly to create a flavorful green onion oil.
Step 2
Once the green onions are well-cooked, push them to one side of the pan. Add 2 tablespoons of anchovy sauce and 2/3 tablespoons of brown sugar. Lower the heat slightly to prevent the sugar from burning and stir-fry until the anchovy sauce and sugar are well combined. (Note: The original recipe used 1 Tbsp sugar, but I reduced the amount slightly to enhance the savory flavor.)
Step 3
When the seasonings are nicely sautéed, turn off the heat. Add 2 bowls of cooked rice and use a spatula to break up any clumps, ensuring the rice grains are separated. Turn the heat back on and stir-fry (‘shake, shake!’) until the rice and seasoning are evenly combined. After stir-frying, taste the rice and add a pinch of salt if needed for extra seasoning. (I found the seasoning to be just right!)
Step 4
While the rice is stir-frying, push it to one side of the pan. In the cleared space, crack in 3 eggs. Add a pinch of salt to the eggs, whisk them well, and then stir with chopsticks while cooking to create a soft scrambled egg.
Step 5
It’s time to plate the delicious fried rice. First, place a portion of the scrambled egg at the bottom of your serving bowl. Then, firmly press the stir-fried rice on top of the egg. Pressing down slightly like this will help the fried rice hold its shape nicely when you invert the bowl. Finally, drizzle with 1/3 tablespoon of sesame oil and sprinkle with toasted sesame seeds for a perfect finish of Ryu Soo-young’s simple egg fried rice!
