  • 1/2 tsp salt
  • 2 tbsp vinegar
  • 2 tbsp olive oil
  • 1 tbsp whole grain mustard
  • 1 tbsp honey
  • Pinch of black pepper

Cooking Instructions

Step 1

It’s best to use the carrots with their peels on to maximize beta-carotene intake, so wash them thoroughly under running water. (Tip: For extra assurance, you can use a non-scratch scrubber, or rub them with baking soda, soak in water for 5 minutes, then rinse.)

Step 2

Using a julienne peeler or mandoline, thinly shred the washed carrots. (Tip: You can adjust the thickness to your preference.) Place the shredded carrots in a bowl, add 1/2 tsp salt and 2 tbsp vinegar. Gently mix and let them sit for 20 minutes to pickle. You’ll notice a lot of water being released from the carrots; squeeze out as much liquid as possible with your hands. You’ll be surprised by the amount of water that comes out.

Step 3

In a bowl, combine the squeezed carrots with 2 tbsp olive oil, 1 tbsp honey, 1 tbsp whole grain mustard, and a pinch of black pepper. Mix everything thoroughly until well combined. Your delicious carrot ‘rape’ salad is ready! (Tip: If you prefer a finer texture, julienne the carrots even thinner.)

You can also make this salad with conventionally shredded carrots. Once the carrots are prepped, the rest of the process is incredibly quick, making it a hassle-free dish even on busy days.
