Ingredients
  • 300g fresh mussels
  • 1/4 onion
  • 1/2 stalk green onion (white part mainly)
  • 1 Tbsp minced garlic
  • 1 tsp vinegar (apple cider vinegar recommended)
  • 1/2 tsp sea salt (to taste)
  • 3 Korean green chili peppers (Cheongyang peppers)
  • A small bunch of crown daisy (or similar leafy green)

Cooking Instructions

Step 1

Gently pull off the byssus threads (beards) from the mussels, pointing downwards. Scrub any dirt off the shells under running water, letting the mussels rub against each other. Rinse thoroughly.

Step 2

Roughly chop the onion to add sweetness to the broth; it will be removed later. Thinly slice the green onion. Once the soup boils, remove the onion pieces.

Step 3

Korean green chili peppers (Cheongyang peppers) are essential for a bit of heat. Adding one red chili pepper adds a nice color. Cut the green chilies lengthwise in half.

Step 4

For a pleasant texture, press the garlic cloves with the side of your knife, then mince them coarsely. Place the prepared mussels, chopped onion, minced garlic, halved green chilies, and sliced green onion into a pot.

Step 5

Pour in enough water to cover the mussels. Bring to a boil over high heat. Once the mussels start to open, taste the broth and season with sea salt as needed.

Step 6

Be careful not to overcook the mussels, as they can become tough and shrink. Just before turning off the heat, add 1 teaspoon of apple cider vinegar to eliminate any fishy odor and enhance the broth’s refreshing taste. Finally, garnish with crown daisy, let it wilt slightly, and your delicious mussels soup is ready!
