How to Make Nutritious Stir-Fried Zucchini (Easy Recipe for Beginners)

Ingredients
  • 2 medium zucchini
  • 2 Tbsp cooking oil
  • 1/2 Tbsp minced garlic
  • 2 Tbsp salted fermented shrimp (saeujeot)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, wash the zucchini thoroughly under running water. Pat them dry and place them on a cutting board. Cut each zucchini lengthwise into two halves, then cut each half in half again, resulting in four long pieces. Next, slice the zucchini into approximately 2mm thick pieces for easy eating. Lightly grease a wide frying pan with 2 Tbsp of cooking oil over medium-low heat. Add all the sliced zucchini to the pan.

Step 2

After adding the zucchini to the pan, sprinkle 1/2 Tbsp of minced garlic evenly over the zucchini. Adding garlic at this stage will infuse a fragrant garlic aroma into the zucchini, making it even more delicious.

Step 3

Next, add 2 Tbsp of salted fermented shrimp (saeujeot). It’s best to use more of the liquid from the saeujeot to ensure the right amount of seasoning and add umami. Stir-fry the zucchini over medium-low heat until it becomes vibrant and glossy. Be careful not to cook over high heat, as the zucchini can burn easily. Continue to stir gently while cooking to ensure even cooking.

Step 4

Once the zucchini reaches your desired tenderness and has a beautiful color, drizzle 1 Tbsp of sesame oil around the edge of the pan just before turning off the heat. The nutty aroma of the sesame oil will enhance the finished dish. After adding the sesame oil, give it a final gentle mix to combine everything with the zucchini, then immediately turn off the stove. Your delicious stir-fried zucchini is now ready!
