Main Ingredients
- 100g cocktail shrimp (defrosted)
- 4 Tbsp cooking oil (use generously)
Shrimp Seasoning
- 1 pinch salt
- 1 pinch black pepper
Shrimp Batter
- 1 large egg
- 30g pancake mix (about 2-3 Tbsp)
- 1 pinch salt
- 1 pinch black pepper
Shrimp Batter
- 1 large egg
- 30g pancake mix (about 2-3 Tbsp)
Cooking Instructions
Step 1
Defrost the frozen cocktail shrimp by rinsing them under cold water or letting them thaw naturally in cold water. After defrosting, ensure the shrimp are completely dry by patting them with paper towels. This step is crucial for achieving a crispy texture.
Step 2
Once the shrimp are dry, season them with a pinch of salt and a pinch of black pepper. Gently toss to coat. This seasoning enhances the natural sweetness of the shrimp.
Step 3
In a separate bowl, crack one large egg and whisk it thoroughly with a fork or whisk until smooth. Make sure the egg mixture is not too watery.
Step 4
Spread about 30g of pancake mix (Korean ‘buchim garu’) onto a plate or shallow dish. This will be the first coating for your shrimp.
Step 5
Coat the seasoned cocktail shrimp evenly with the pancake mix, ensuring a thin layer. Gently shake off any excess flour to prevent a thick coating.
Step 6
Dip the flour-coated shrimp into the whisked egg mixture, ensuring each shrimp is fully covered with egg wash. This will help the next coating adhere properly.
Step 7
Heat about 4 tablespoons of cooking oil in a frying pan over medium-low heat. Place the egg-coated shrimp in the hot oil, arranging them in a single layer. Fry for about 2-3 minutes per side, or until golden brown and crispy, approximately 4-6 minutes in total. This cooking method ensures the shrimp are cooked through and the coating is perfectly crisp. Drain on paper towels before serving and enjoy!
