Main Ingredients- 1 handful dried shiitake mushrooms (approx. 30g)
- 300-400g garlic scapes
- 2 Korean green chili peppers (Cheongyang peppers)
- A little bit of green onion
Seasoning Ingredients- 2 Tbsp sunflower oil or vegetable oil
- 2 pinches salt (adjust to taste)
- 2-3 Tbsp all-purpose soy sauce or regular soy sauce
- 2-3 Tbsp oligosaccharide or corn syrup
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 2 Tbsp sunflower oil or vegetable oil
- 2 pinches salt (adjust to taste)
- 2-3 Tbsp all-purpose soy sauce or regular soy sauce
- 2-3 Tbsp oligosaccharide or corn syrup
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, soak the dried shiitake mushrooms in lukewarm water for about 30 minutes until softened. Rinse the rehydrated mushrooms under running water and squeeze out excess moisture. Slice them into bite-sized pieces. (Tip: You can use the mushroom soaking water as a broth.)

Trim off the tough ends of the garlic scapes and wash them thoroughly. Then, cut them into bite-sized pieces, about 3-4cm long.

Rinse the cut garlic scapes briefly in cold water to maintain their crispness. Drain them well in a colander.

Finely mince the Korean green chili peppers after removing the seeds for a touch of spiciness. Finely chop the green onion for added aroma. (Tip: If you prefer less spice, you can use regular chili peppers instead of Cheongyang peppers or omit them.)
