  • 1 handful dried shiitake mushrooms (approx. 30g)
  • 300-400g garlic scapes
  • 2 Korean green chili peppers (Cheongyang peppers)
  • A little bit of green onion

Seasoning Ingredients

  • 2 Tbsp sunflower oil or vegetable oil
  • 2 pinches salt (adjust to taste)
  • 2-3 Tbsp all-purpose soy sauce or regular soy sauce
  • 2-3 Tbsp oligosaccharide or corn syrup
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, soak the dried shiitake mushrooms in lukewarm water for about 30 minutes until softened. Rinse the rehydrated mushrooms under running water and squeeze out excess moisture. Slice them into bite-sized pieces. (Tip: You can use the mushroom soaking water as a broth.)

Trim off the tough ends of the garlic scapes and wash them thoroughly. Then, cut them into bite-sized pieces, about 3-4cm long.

Rinse the cut garlic scapes briefly in cold water to maintain their crispness. Drain them well in a colander.

Finely mince the Korean green chili peppers after removing the seeds for a touch of spiciness. Finely chop the green onion for added aroma. (Tip: If you prefer less spice, you can use regular chili peppers instead of Cheongyang peppers or omit them.)

Now, heat oil in a wide pan. Add all the prepared ingredients: dried shiitake mushrooms, garlic scapes, minced chili peppers, and chopped green onion.

(Tip: Adjust the amount of soy sauce and oligosaccharide according to the quantity of ingredients and your personal preference. Add more if you prefer a saltier or sweeter taste.)
