Main Ingredients
- 1 bowl of cooked rice
- 1 large egg
- 2 Tbsp chopped scallions (green onions)
- 1 sausage (optional)
- 2 Tbsp grapeseed oil or cooking oil
Seasoning
- 1 tsp soy sauce
- 1/2 tsp sugar
- Pinch of salt (to taste)
- 1 tsp soy sauce
- 1/2 tsp sugar
- Pinch of salt (to taste)
Cooking Instructions
Step 1
In a wide bowl, place 1 bowl of cooked rice. If using leftover cold rice, gently warm it in the microwave beforehand; this will make it easier to stir-fry.
Step 2
Crack 1 large egg over the rice.
Step 3
Add a pinch of salt. (Since we’ll be adding soy sauce later, it’s best to start with less salt.) Using chopsticks or a fork, gently mix the egg and salt into the rice, ensuring each grain is coated. Mix carefully to avoid clumping the rice.
Step 4
Now, let’s prepare to stir-fry. Heat a pan over medium heat and add 2 Tbsp of grapeseed oil. Swirl the pan to coat the bottom evenly.
Step 5
Once the oil is hot, add 2 Tbsp of chopped scallions and stir-fry for about 20-30 seconds until fragrant, infusing the oil with scallion aroma. Then, add the egg-coated rice to the pan. Using a spatula or spoon, press down gently on the rice to break up any clumps and stir-fry until it becomes fluffy and slightly toasted. You should hear a gentle sizzling sound.
Step 6
Push the fried rice to one side of the pan to create space. Pour 1 tsp of soy sauce into the empty space. The hot pan will slightly caramelize the soy sauce, enhancing its flavor.
Step 7
Add 1/2 tsp of sugar next to the soy sauce for a touch of sweetness.
Step 8
Once the soy sauce and sugar start to bubble gently in the pan, releasing a delicious aroma,
Step 9
Quickly mix everything together with the fried rice and continue to stir-fry until the soy sauce and sugar are evenly distributed and the rice is nicely separated and fluffy again. The egg should have coated the rice grains, giving them a beautiful yellow hue. Your delicious scallion and egg fried rice is ready!

While the basic scallion and egg fried rice is delicious on its own, for an even heartier and visually appealing dish, you can pan-fry a whole sausage and serve it alongside. This makes the meal even more satisfying!
