  • Category : Side dish
  • Ingredient Category : Processed foods
  • Occasion : Everyday
  • Cooking : Stir-fry
  • Servings : 4 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Ingredients

  • 1/2 head Aged Kimchi
  • 1 can Tuna (approx. 150g)
  • 1/2 Onion
  • 2 Tbsp Sugar (adjust based on kimchi’s sourness)
  • 1 Tbsp Olive Oil
  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

Start by preparing half a head of well-fermented aged kimchi, the star ingredient of this dish.

Step 1

Step 2

To bring out the best flavor, shake off excess kimchi brine and squeeze out most of the liquid. Then, chop the kimchi into bite-sized pieces, about 2-3 cm. Be careful not to squeeze out too much liquid, as this can make the stir-fry dry.

Step 2

Step 3

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped kimchi and 2 tablespoons of sugar. If your kimchi is particularly sour, consider adding an extra 1/2 tablespoon of sugar to balance the flavors.

Step 3

Step 4

Stir-fry the kimchi over medium heat, stirring occasionally to prevent it from sticking to the pan and to ensure even cooking.

Step 4

Step 5

Continue to stir-fry the kimchi for about 5-7 minutes, or until it becomes tender and loses some of its crispness, yet retains a pleasant chew. This step is crucial for developing a deep flavor.

Step 5

Step 6

Add the thinly sliced half onion to the pan and stir-fry with the kimchi until the onion becomes translucent and releases its sweetness. If the pan seems too dry during this process, you can add 2-3 tablespoons of water to prevent sticking and maintain moisture.

Step 6

Step 7

Finally, add 1 can of drained tuna. Gently fold the tuna into the kimchi mixture, being careful not to break it up too much. Stir-fry just until the tuna is heated through and incorporated with the kimchi and sauce. Overcooking the tuna can make it dry, so a brief stir-fry is best.

Step 7

Step 8

The key to a delicious tuna kimchi stir-fry lies in the quality of your kimchi and thoroughly stir-frying it! Balancing the sourness with sugar and cooking it sufficiently in oil brings out the rich umami. Feel free to substitute the tuna with ham or other ingredients for a variation. Serve this amazing stir-fry over a bowl of hot, steamed rice!
