- 1/2 head Aged Kimchi
- 1 can Tuna (approx. 150g)
- 1/2 Onion
- 2 Tbsp Sugar (adjust based on kimchi’s sourness)
- 1 Tbsp Olive Oil
- A pinch of Sesame Seeds

Step 1
Start by preparing half a head of well-fermented aged kimchi, the star ingredient of this dish.

To bring out the best flavor, shake off excess kimchi brine and squeeze out most of the liquid. Then, chop the kimchi into bite-sized pieces, about 2-3 cm. Be careful not to squeeze out too much liquid, as this can make the stir-fry dry.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped kimchi and 2 tablespoons of sugar. If your kimchi is particularly sour, consider adding an extra 1/2 tablespoon of sugar to balance the flavors.
