Ingredients
- 3 small potatoes (approx. 300g)
- 4 Tbsp Oligodang (corn syrup or similar)
- 1 Tbsp Mirin (rice wine)
- 2 Tbsp Soy Sauce
- A pinch of black sesame seeds (for garnish)
Cooking Instructions
Step 1
First, thoroughly wash and peel the 3 potatoes. Then, cut them into bite-sized cubes, about 2-3 cm. It’s important to keep them a decent size, as smaller pieces can break apart easily during cooking.

Rinse the cut potatoes under cold running water 2-3 times to wash away excess starch. This step helps prevent the potato pieces from sticking together or to the bottom of the pot, and also results in a cleaner taste for the braised dish.

After rinsing, drain the potatoes well using a colander. Ensure they are dry; excess water can cause splattering when stir-frying. You can also gently pat them dry with paper towels.

Now, place the drained potatoes in a pot. Add 4 tablespoons of Oligodang and mix to coat the potatoes evenly. Let them sit for about 5 minutes; the potatoes will start to release their natural moisture.

Turn the heat to medium and stir-fry the potatoes gently. As they cook, their moisture combined with the Oligodang will create a light coating. Once the potato surfaces begin to look slightly translucent, reduce the heat to medium-low. Be careful not to cook over high heat, as they can burn.

Once the potatoes are nearly cooked, add 1 tablespoon of Mirin and 2 tablespoons of soy sauce. Stir well to distribute the liquids evenly.
