Tofu is an essential part of a healthy diet! This recipe makes a lighter version of Mapo Tofu Rice using cauliflower rice and plenty of vegetables like cabbage and shiitake mushrooms. It’s packed with fiber, low in calories, and incredibly satisfying.
Ingredients
- 1/2 bowl of mixed grain rice (warmed)
- 100g cauliflower rice (thawed if frozen)
- 90g fresh cabbage (cut into bite-sized pieces)
- 2 shiitake mushrooms (sliced thinly)
- 5cm green onion (finely chopped)
- 1/4 onion (sliced)
- 1 tsp olive oil
- 1/4 block firm or silken tofu (cut into 1cm cubes)
- Pinch of salt
Seasoning
- 1 Tbsp water
- 1 tsp cooking wine (mirin)
- 1 tsp red pepper flakes (gochugaru)
- 1 tsp soy sauce
- 1 tsp soybean paste (doenjang)
- 1 tsp red chili paste (gochujang)
- 1 tsp sesame oil
- 1 Tbsp water

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Thinly slice the shiitake mushrooms about 0.5cm thick. Cut the fresh cabbage into bite-sized pieces and the onion into roughly 1.5cm square pieces. Slicing the vegetables this way ensures a pleasant texture and allows them to absorb the sauce well.

Now, let’s start stir-frying! Heat a pan over medium heat. Add the olive oil and the finely chopped green onions. Sauté until fragrant to create a flavorful green onion oil. This step significantly enhances the dish’s aroma and taste.
