Main Ingredients
  • 200g fresh green onions (use both white and green parts)
  • 1/4 bell pepper (red or yellow)
  • 1/4 onion
  • 3 Tbsp cooking oil
  • 1 pinch salt
  • 1 pinch black pepper

Cooking Instructions

Step 1

First, wash the green onions thoroughly. Cut the white parts into approximately 5-7cm lengths. Include the green leafy parts as well to enhance the dish’s aroma. Chop them into bite-sized pieces.

Step 2

For the white parts of the cut green onions, make a cross-shaped cut (four equal segments) once more. This helps them cook evenly and absorb flavors better, ensuring a tender result.

Step 3

Thinly slice the bell pepper into strips after removing the seeds. The bell pepper adds a delightful crunch and sweetness.

Step 4

Peel and thinly slice the onion into strips, similar to the bell pepper. The natural sweetness of the onion will add depth and savory notes to the stir-fry.

Step 5

Heat 3 tablespoons of cooking oil in a frying pan over medium heat. Add the sliced bell pepper and onion and stir-fry until they become translucent. Cooking the vegetables until their fragrance and sweetness are released into the oil is key.

Step 6

Once the bell pepper and onion are tender, add the prepared green onions. Stir-fry until the green onions just begin to wilt. Season with 1 pinch of salt and 1 pinch of black pepper. Be careful not to overcook the green onions, as they should retain a slight crispness.

Step 7

When the green onions are partially cooked, add 20ml of water, 1 Tbsp of soy sauce, and 1/2 Tbsp of oligosaccharide. Stir-fry quickly to combine all ingredients. If you don’t have oligosaccharide, granulated sugar works too, but oligosaccharide gives a nice glossy finish.

Step 8

Finally, just before turning off the heat, drizzle in 1 Tbsp of sesame oil for an aromatic finish. The nutty aroma of sesame oil will elevate the flavor of the green onions. Plate the delicious stir-fried green onions and enjoy them while warm!
