Cooking Instructions
Step 1
First, prepare the two sheets of flat fish cakes. To remove excess oil, you can briefly blanch them in hot water or rinse them under running water for a cleaner taste. After draining, thinly slice the fish cakes into strips about 0.5cm wide. Slice the luncheon meat thinly to match the thickness of the fish cakes.
Step 2
Heat a pan over medium-high heat. Add the sliced fish cakes and 1 Tbsp of soy sauce. Stir-fry quickly over high heat to prevent sticking and ensure the sauce is evenly absorbed. Cook for about 1 minute, stirring, until the soy sauce coats the fish cakes well.
Step 3
Now, add the thinly sliced luncheon meat to the pan and stir-fry it with the fish cakes. Luncheon meat may release some oil, so reduce the heat to medium and stir-fry for about 1-2 minutes, being careful not to burn it. The luncheon meat will become slightly golden and add a wonderful aroma.
Step 4
Once the fish cakes and luncheon meat are well stir-fried, add 1 Tbsp of corn syrup. Corn syrup adds a lovely sheen and balances the sweetness. You can also sprinkle a little toasted sesame seeds at this stage for an extra nutty flavor and aroma (optional).
Step 5
Finally, stir everything together quickly for about 30 seconds more, ensuring all ingredients are well combined with the sauce. Be careful not to overcook, as the fish cakes can become tough. Your delicious Luncheon Meat Stir-Fried Fish Cakes are ready! Enjoy with a warm bowl of rice.
