Main Ingredients
- 2 fresh squid
- 1/2 fresh green onion (scallion)
- 1/2 medium onion
- 1/6 carrot
- 1 red chili pepper (for color)
- 1 Tbsp sesame oil
Savory Soy Sauce Dressing
- 3 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp brown sugar
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp cooking wine (mirin)
- Pinch of sesame seeds
- 3 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp brown sugar
- 1 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp cooking wine (mirin)
- Pinch of sesame seeds
Cooking Instructions
Step 1
Let’s start by preparing the vegetables. Coarsely slice the onion into thick strips. Cut the carrot into similar-sized pieces to ensure they cook evenly with the onion.
Step 2
Cut the green onion into large pieces to release its fragrance as it cooks. For the red chili pepper, remove the seeds and chop it finely.
Step 3
Cleanliness is key to a great dish! Carefully remove the squid’s innards, then rinse the squid thoroughly inside and out under running water. Separate the body and tentacles. Gently peel off the skin from the squid’s body using a paper towel for a softer texture.
Step 4
Tip: I peeled the skin off the squid because I thought my child might not like it. If you’re cooking for adults, you can leave the skin on!
Step 5
Cut the squid body in half lengthwise, then score it diagonally. This not only makes it look appealing but also helps the sauce penetrate better. For an even prettier presentation, you can score it in a diamond pattern.
Step 6
Remember that squid shrinks when cooked. To ensure a satisfying portion size, cut the pieces slightly larger than you think you need.
Step 7
Cut the squid tentacles into bite-sized pieces. For longer tentacles, cut them into thirds, and shorter ones into halves. This prevents them from tangling while stir-frying.
Step 8
Now, let’s make the delicious soy sauce dressing! In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp brown sugar, 1 Tbsp oligosaccharide, and 1 Tbsp cooking wine. Mix them well. Finally, add a pinch of sesame seeds for that delightful nutty flavor.
Step 9
Heat about 2 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped green onions first and stir-fry them until fragrant, creating a flavorful green onion oil.
Step 10
Once the green onions are aromatic, add the prepared squid and stir-fry it lightly. Cook over medium heat just until the squid turns opaque. Avoid overcooking, as it can become tough.
Step 11
When the squid is partially cooked, add the sliced carrots and onions. Stir-fry them quickly until they start to soften slightly. Then, pour in the prepared soy sauce dressing and continue to stir-fry.
Step 12
Turn the heat up to high and stir-fry everything rapidly until the sauce coats all the ingredients evenly. Finally, add the chopped red chili pepper for a pop of color and 1 Tbsp of sesame oil. Give it a final quick toss, and your savory soy sauce squid stir-fry is ready!
Step 13
Serve the finished soy sauce squid stir-fry generously in a bowl. Enjoy it with a side of warm rice for a satisfying and delicious meal!
