How to Make Stir-fried Smoked Duck with Chives – A Delicious Duck Stir-fry Recipe
Smoked duck is an excellent choice for a healthy diet, being rich in protein and unsaturated fatty acids. While delicious when steamed, this recipe features a delightful stir-fry with fresh vegetables and fragrant chives. Since pre-packaged smoked duck can sometimes have a mild saltiness, we’ll add a pinch (about 2 pinches) of salt to enhance the flavor. This smoked duck and chive stir-fry is perfect as a side dish or even a light meal.
Smoked Duck and Chive Stir-fry Ingredients
- 350g Smoked Duck
- 60g Red Bell Pepper
- 62g Yellow Bell Pepper
- 32g Green Bell Pepper (Piman)
- 120g Onion
- 39g Whole Garlic Cloves
- 25g Chives
- 2 pinches Salt (adjust to taste)
- Appropriate amount of Black Pepper
- Appropriate amount of Toasted Sesame Seeds
Cooking Instructions
Step 1
▶ First, gently separate the sliced smoked duck pieces with your hands, wearing gloves if desired, to prevent them from sticking together. This ensures even cooking and a better texture.
Step 2
▶ Cut the chives into approximately 4cm lengths. Core the red and yellow bell peppers and slice them into strips similar in length to the chives. Slice the onion similarly. Thinly slice the garlic cloves to about 2mm thickness. Uniformly cut vegetables will cook evenly, leading to a more delicious stir-fry.
Step 3
▶ Place the sliced garlic and prepared smoked duck into a wok or frying pan. Stir-fry over medium-high or medium heat, turning the pieces frequently until the duck becomes tender. Smoked duck releases a good amount of its own fat, so you usually don’t need to add extra cooking oil. This rendered duck fat adds wonderful flavor.
Step 4
▶ Once the duck is tender, add all the prepared vegetables (except the chives) to the pan. Stir-fry over high heat, tossing frequently, just until the vegetables are crisp-tender. We want to maintain their fresh crunch.

▶ Before seasoning, taste the smoked duck to gauge its saltiness. The saltiness can vary between brands. Add about 2 pinches of salt if needed to enhance the overall flavor. Once seasoned, toss everything together to distribute the seasoning evenly.
Step 6
▶ Finally, add the chives and stir-fry quickly for just a few stirs, about 3-4 times, until they are slightly wilted, then turn off the heat immediately. Chives are delicate and cook very quickly; overcooking will make them mushy and lose their vibrant color. The key is to preserve their fresh, slightly crisp texture and aromatic flavor. Feel free to add a generous amount of chives if you like.
