Hello everyone! Today, I’m sharing a recipe for a healthy home-style side dish that will be the star of your meal prep: a delicious stir-fry made with shiitake mushrooms and bok choy! It’s incredibly simple to make, so anyone can whip it up in no time. While I used dried shiitake mushrooms that require soaking, you can absolutely use fresh, plump shiitake mushrooms as well. This recipe is not only quick but also packed with flavor, making it a perfect addition to your meals.
Main Ingredients
- Bok choy: 5 heads
- Onion: 1/2
- Shiitake mushrooms: 10 (dried or fresh)
Seasoning
- Minced garlic: 0.5 Tbsp
- Oyster sauce: 1 Tbsp
- Soy sauce: 1 Tbsp
- Oligosaccharide (or corn syrup/honey): 1 Tbsp
- Sesame oil: 1 Tbsp
- Pepper: a pinch

Cooking Instructions
Step 1
If using dried shiitake mushrooms, place them in lukewarm water and soak for about 30 minutes until they are fully rehydrated. If using fresh shiitake mushrooms, you can skip this step.
Step 2
For the bok choy, trim off the tough base of the stem with scissors or a knife. Gently spread the leaves apart.
Step 3
Rinse the prepared bok choy thoroughly under running water, ensuring you clean between the leaves. Shake off excess water before setting aside.
Step 4
Once the shiitake mushrooms are rehydrated, gently squeeze out excess water. Then, cut them into bite-sized pieces, about 3 to 5 sections each.

Peel and thinly slice half an onion. All your ingredients are now prepped and ready to go!

Heat a pan over medium heat and add cooking oil. Add 0.5 Tbsp of minced garlic and stir-fry until fragrant, about 30 seconds.

Once the garlic is aromatic, add the prepared shiitake mushrooms, sliced onion, and bok choy to the pan all at once. Stir-fry everything together.

Add 1 Tbsp oyster sauce, 1 Tbsp soy sauce, and 1 Tbsp oligosaccharide. Stir well to coat all the ingredients and continue to cook over low heat.

As the bok choy cooks, it will release some moisture, which can dilute the seasoning. Taste and adjust with a small pinch of salt if needed. Feel free to add more or less seasoning to your preference.

Just before turning off the heat, drizzle in 1 Tbsp of sesame oil for a rich, nutty aroma. Your delicious shiitake mushroom and bok choy stir-fry is now complete!
