Step 1
First, peel the 2 potatoes and cut them into bite-sized cubes, suitable for fried rice. For a pleasant texture, avoid cutting them too small.

Soak the cut potatoes in cold water for about 5 minutes to remove excess starch. This helps prevent the rice from clumping and ensures a fluffy texture. Drain the potatoes thoroughly in a colander.

Finely dice the 1/2 onion, 1/6 carrot, and 1/4 zucchini. Aim for a size similar to the potatoes, or slightly smaller, for a harmonious blend of ingredients.
