Cooking Instructions

Step 1

First, peel the 2 potatoes and cut them into bite-sized cubes, suitable for fried rice. For a pleasant texture, avoid cutting them too small.

Soak the cut potatoes in cold water for about 5 minutes to remove excess starch. This helps prevent the rice from clumping and ensures a fluffy texture. Drain the potatoes thoroughly in a colander.

Step 3

Finely dice the 1/2 onion, 1/6 carrot, and 1/4 zucchini. Aim for a size similar to the potatoes, or slightly smaller, for a harmonious blend of ingredients.

Finely chop the 1/2 scallion. Sautéing the scallions first will release their fragrant aroma, adding a deeper flavor to the entire fried rice.

Heat a pan over medium-high heat and add cooking oil. Sauté the chopped scallions until fragrant. Once the scallion aroma intensifies, add the diced potatoes and carrots and stir-fry.

Continue to stir-fry the potatoes and carrots, ensuring they don’t stick to the pan. Add a pinch of salt to season the vegetables and enhance their flavor.
