Ingredients

  • Pork Belly 250g (cut into bite-sized pieces)
  • Korean Green Peppers (Kkwari Gochu) 6 pcs (stems removed, cut into 2-3cm pieces)
  • Green Onion 5cm (finely chopped or diagonally sliced)
  • Minced Onion 2 Tbsp
  • Toasted Sesame Seeds a pinch (for garnish)

Sauce

  • Mirin (Sweet Rice Wine) 1 Tbsp
  • Soy Sauce 1 Tbsp
  • Oyster Sauce 1/2 Tbsp
  • Sugar 2 tsp
  • Fish Sauce (or Anchovy Sauce) 1 tsp
  • Minced Garlic 1 tsp
  • Gochugaru (Korean Chili Flakes) 1 tsp

Cooking Instructions

First, wash the Korean green peppers thoroughly under running water and remove the stems. Then, cut them into bite-sized pieces, about 2-3cm long. Cutting them into manageable pieces will make stir-frying easier.

Prepare the green onion by finely chopping it or slicing it diagonally. Also, finely mince about 1/4 of an onion; this will add a lovely sweetness and depth of flavor. Having your vegetables prepped beforehand ensures a smooth cooking process.

In a small bowl, combine all the sauce ingredients: 1 Tbsp Mirin, 1 Tbsp Soy Sauce, 1/2 Tbsp Oyster Sauce, 2 tsp Sugar, 1 tsp Fish Sauce, 1 tsp Minced Garlic, and 1 tsp Gochugaru. Whisk them together until well combined, creating a savory and slightly sweet sauce that hints at Chinese flavors thanks to the oyster sauce.

Heat a pan over medium heat with a little oil. Add the chopped green onions and stir-fry until fragrant, about 1-2 minutes. This process, known as making ‘green onion oil,’ infuses the oil with a wonderful aroma that elevates the dish.
