- Gochugaru (Korean Chili Flakes) 1 tsp
- Mirin (Sweet Rice Wine) 1 Tbsp
- Soy Sauce 1 Tbsp
- Oyster Sauce 1/2 Tbsp
- Sugar 2 tsp
- Fish Sauce (or Anchovy Sauce) 1 tsp
- Minced Garlic 1 tsp
- Gochugaru (Korean Chili Flakes) 1 tsp
Cooking Instructions
Step 1
First, wash the Korean green peppers thoroughly under running water and remove the stems. Then, cut them into bite-sized pieces, about 2-3cm long. Cutting them into manageable pieces will make stir-frying easier.
Step 2
Prepare the green onion by finely chopping it or slicing it diagonally. Also, finely mince about 1/4 of an onion; this will add a lovely sweetness and depth of flavor. Having your vegetables prepped beforehand ensures a smooth cooking process.
Step 3
In a small bowl, combine all the sauce ingredients: 1 Tbsp Mirin, 1 Tbsp Soy Sauce, 1/2 Tbsp Oyster Sauce, 2 tsp Sugar, 1 tsp Fish Sauce, 1 tsp Minced Garlic, and 1 tsp Gochugaru. Whisk them together until well combined, creating a savory and slightly sweet sauce that hints at Chinese flavors thanks to the oyster sauce.
Step 4
Heat a pan over medium heat with a little oil. Add the chopped green onions and stir-fry until fragrant, about 1-2 minutes. This process, known as making ‘green onion oil,’ infuses the oil with a wonderful aroma that elevates the dish.
Step 5
Once the green onions are fragrant, add the cut pork belly to the pan. Continue to stir-fry over medium heat until the pork belly is nicely browned and slightly crispy. The rendered fat from the pork belly will add richness to the dish.
Step 6
When the pork belly is mostly cooked, add the minced onion to the pan. Reduce the heat to medium-low and stir-fry until the onions become translucent and tender, releasing their natural sweetness.
Step 7
Once the pork belly is fully cooked and the onions are softened, pour in the prepared sauce. Immediately lower the heat to low to prevent the sauce from burning and allow it to coat and meld with the ingredients.
Step 8
Finally, add the cut Korean green peppers to the pan. Stir-fry for just about 1-2 minutes over low heat. You want them to be tender-crisp, not mushy, so don’t overcook them. This preserves their pleasant bite and fresh flavor.
Step 9
When everything is well combined and coated in the sauce, turn off the heat. Transfer the stir-fry to a serving dish and sprinkle with toasted sesame seeds for a final touch of nutty flavor and visual appeal. Enjoy this delicious pork belly and green pepper stir-fry with a bowl of hot rice!
