Main Ingredients
  • 1 small can of SPAM (approx. 200g)
  • 1 sheet of Nori (seaweed)
  • 2 bowls of warm cooked rice (approx. 400g)

SPAM Glaze Ingredients
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Mirin (Sweet Rice Wine)
  • 2 Tbsp Water
  • 0.5 Tbsp Sugar
  • A pinch of Ginger Powder (or 0.5 tsp minced fresh ginger)

Rice Seasoning
  • 1 Tbsp Toasted Sesame Oil
  • 0.2 tsp Salt (adjust to taste)

Cooking Instructions

Step 1

Prepare the SPAM. Open the can and remove the SPAM. Cut it into 4 equal portions. (Tip: Briefly rinsing the SPAM under hot water can help remove excess fat and result in a cleaner flavor.)

Step 2

Create the delicious glaze for the SPAM. In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp mirin, 2 Tbsp water, 0.5 Tbsp sugar, and a pinch of ginger powder. Stir well until all ingredients are fully blended.

Step 3

Heat a pan over medium heat. Place the prepared SPAM pieces in the pan and sear them on both sides until golden brown. This searing process enhances the SPAM’s savory flavor.

Step 4

Once the SPAM is nicely browned, pour the prepared glaze mixture into the pan.

Step 5

Bring the glaze to a simmer, then reduce the heat slightly. Let the SPAM simmer in the glaze, stirring occasionally, until it’s well coated and the glaze has thickened slightly. Cook until the SPAM is nicely glazed and slightly reduced. (Tip: Taste as you go and adjust the cooking time to prevent it from becoming too salty.)

Step 6

Season the warm rice. Add 1 Tbsp toasted sesame oil and 0.2 tsp salt to the rice and gently mix. Since the SPAM is already seasoned with the glaze, it’s best to lightly season the rice. However, a subtle seasoning in the rice helps balance the overall flavor.

Step 7

Cut the sheet of Nori into 4 long strips. This makes them the perfect size for wrapping the musubi.

Step 8

Using a mold (like a square mold) or your hands, take a portion of the seasoned rice and shape it into a ball or square.

Step 9

Place a piece of the glazed SPAM on top of the shaped rice. Then, wrap the Nori strip around the rice and SPAM to secure it. (Tip: If you don’t have a mold, you can clean out an empty SPAM can and use it as a makeshift mold.) Repeat this process to make 3-4 musubi bites.
