Main Ingredients
  • 1 pack Chicken Breast (recommend pre-portioned diet-friendly chicken breast)

Vegetables and Seasoning
  • 1/2 Onion, cut into thick strips
  • 1/3 Tbsp Minced Garlic
  • 1/2 King Oyster Mushroom, cut into thick strips
  • 1 Green Chili Pepper, finely chopped (adjust to spice preference)
  • 1/2 Tbsp Soy Sauce
  • A little Sesame Oil (or cooking oil)

Cooking Instructions

Step 1

First, prepare the chicken breast. Using pre-packaged diet chicken breast makes it convenient. Cut the chicken breast into bite-sized pieces using scissors or a knife. Avoid cutting them too small, as they might lose moisture when cooked; slightly larger pieces are better.

Step 2

Lightly grease a pan with sesame oil (or cooking oil) and heat over medium-low heat. Add the prepared chicken breast and sear lightly on both sides until golden brown. Don’t overcook; aim to just sear the surface quickly to prevent it from becoming dry and tough.

Step 3

Once the chicken breast is partially seared, add the thickly sliced onion, king oyster mushroom, and minced garlic. Stir and toss everything together in the pan along with the chicken breast. Sauté for 1-2 minutes until the vegetables soften slightly.

Step 4

Now it’s time to add flavor. Pour the 1/2 Tbsp of soy sauce around the edges of the pan and let it sizzle slightly to impart a smoky aroma. Finally, add the finely chopped green chili pepper and stir-fry briefly to combine. This adds a spicy kick. You can substitute with red chili peppers for a touch of color.

Step 5

Transfer the perfectly cooked chicken breast and vegetable stir-fry to a plate. Enjoy it immediately while it’s warm to best appreciate the freshness of the vegetables and the tenderness of the chicken. A sprinkle of toasted sesame seeds can be added for garnish. Savor this healthy and delicious pan-seared chicken breast with vegetables!
