Super Simple Grilled Deodeok: While the aroma was milder than expected, it was still delicious!

I made grilled deodeok for the first time in a long while, as my younger son loves it and I don’t get to make it often. I usually prefer buying whole deodeok and preparing it myself for the best flavor, but my hands have been hurting, so I opted for pre-peeled ones this time. Strangely, even though it looked like it would have a strong aroma, that scent disappeared once I seasoned and grilled it. Only the distinct deodeok flavor remained. Still, my sons enjoyed it very much, saying it was delicious, and I did too! Even without a strong aroma, its beneficial properties must remain, right? Ingredients
  • 1 bag peeled Deodeok (Korean mountain root)

Seasoning Sauce
  • 3 Tbsp Gochujang (Korean chili paste)
  • 1 tsp minced garlic
  • 3 Tbsp honey
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • Chopped scallions (optional)
  • Sesame oil (optional)
  • Toasted sesame seeds (optional)

Cooking Instructions

Step 1

First, rinse the peeled deodeok thoroughly under running water. After washing, place the deodeok in a colander to drain excess water. This helps the seasoning adhere better and results in a tastier grilled dish.

Step 2

Place the deodeok on a cutting board. Gently pound it with a mallet or the back of a knife to flatten it out. Be careful not to pound too hard, as this can tear the deodeok. This step ensures the seasoning penetrates evenly and the deodeok cooks uniformly.

Step 3

Let’s prepare the delicious seasoning sauce! In a bowl, combine 3 tablespoons of gochujang, 1 teaspoon of minced garlic, 3 tablespoons of honey, and 1 tablespoon of gochugaru. Mix well. Add some chopped scallions, a drizzle of sesame oil, and toasted sesame seeds for enhanced flavor.

Step 4

Add the flattened deodeok to the prepared seasoning sauce and mix gently to coat evenly. Ensure the sauce is well distributed, then cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. Marinating allows the flavors to deepen.

Step 5

Heat a non-stick pan over medium-low heat. Place the marinated deodeok in the pan and grill, flipping occasionally, until golden brown and slightly charred on both sides. Avoid burning the deodeok by adjusting the heat as needed. You’ll know it’s ready when it has a beautiful color and a pleasant aroma.

Step 6
