  • 1 Tbsp butter

Seasoning

  • 2/3 Tbsp oyster sauce (adds umami)
  • 1 Tbsp sesame oil (enhances nutty flavor!)

First, wash the chives thoroughly, drain any excess water, and then cut them into approximately 3-4 cm lengths for easy eating. Cutting them too long can make stir-frying a bit awkward.

In a large bowl, crack the 4 eggs. Add 3 tablespoons of milk for a tender texture and 1 tablespoon of cooking wine to eliminate any eggy smell. Whisk everything together until smooth and well combined, ensuring there are no lumps. Finally, add a tiny pinch of salt to season.

Heat a non-stick pan over medium heat. Add 1 tablespoon of cooking oil and 1 tablespoon of butter, allowing them to melt and coat the pan evenly. Be careful not to let the butter burn.

As you see the edges of the egg begin to set, gently stir and scramble it using a spatula or chopsticks. The key is to create soft, fluffy curds rather than overcooking it, which can make the eggs tough. Aim for a state where the eggs are about 70% cooked.
