Savory Cabbage Cheese Sandwich (No Bread!)

Ingredients
- Shredded Cabbage: 3 small handfuls (approx. 60g)
- Onion: 1/3, thinly sliced
- Green Onion: 1/4, finely chopped
- Eggs: 2
- Mozzarella Cheese: As needed
- Baby Spinach (or Kale): A handful
- Tomato: 1/2, thinly sliced
- Olive Oil: A drizzle
- Salt: A pinch
Cooking Instructions
Step 1
First, to freshen the cabbage and remove any potential residue, soak it in water with a splash of vinegar for about 5 minutes. Then, rinse it thoroughly under cold water.

Finely shred the thoroughly washed cabbage. Shredding it thinly will result in a tender sandwich texture and ensure it cooks evenly.

The cabbage has already been thinly shredded in step 1.

Thinly slice the onion, similar to the cabbage, and finely chop the green onion. The sweetness of the onion and the aroma of the green onion will add depth to your sandwich.

The onion and green onion were sliced and chopped in step 3.

In a large bowl, combine the thinly shredded cabbage, sliced onion, and chopped green onion. Crack in the 2 eggs and add a pinch of salt. Mix everything together well. The eggs act as a binder, holding all the ingredients together.

The ingredients from step 5 were mixed well with eggs and salt.

Heat a non-stick pan over medium-low heat and add a drizzle of olive oil. Divide the cabbage mixture into two equal portions and carefully place them in the pan, shaping them into round patties like sandwich bread. Cook each side for about 3-4 minutes, or until golden brown and cooked through. Cooking on low heat ensures the inside is tender and doesn’t burn.

In step 7, the heated pan was drizzled with olive oil, and the cabbage mixture was divided and cooked on low heat to create two sandwich ‘bread’ patties.

When the cabbage patties are almost cooked, layer a generous amount of fresh baby spinach (or kale) onto one of the patties. Arrange the thinly sliced tomatoes on top of the spinach. The fresh vegetables add a wonderful burst of flavor and texture.

Sprinkle a good amount of mozzarella cheese over the spinach and tomatoes. As the cheese melts, it will help bind everything together and add a rich, delicious flavor.
