Cooking Instructions

Step 1

Let’s start by making the delicious teriyaki sauce, which is the heart of this fried rice. Prepare your ingredients: some common vegetables readily available at home and fresh beef. We’ll use potato, carrot, onion, bell peppers, zucchini, and aromatic chives to add texture and flavor to our fried rice.

Step 2

Now, let’s prepare the teriyaki sauce that will give our fried rice its signature flavor. Instead of regular soy sauce, we’re using the rich and savory Kikkoman Hon Tsuyu. In a bowl, combine 1 cup of Kikkoman Hon Tsuyu, 8 Tbsp of sugar, and 2 Tbsp of mirin. For added aroma, toss in 1/2 stalk of sliced green onion, 1 tsp of minced ginger, 3 whole peppercorns, and 2 cloves. Finally, pour in 1/2 cup of water and mix everything well. Simmer this mixture over medium-low heat.

Step 3

As the sauce begins to simmer, the green onion will soften, and if you’ve added any fruit (like kiwi), it will break down. This process allows the ingredients’ flavors to infuse deeply into the sauce, creating a perfectly balanced sweet and savory teriyaki sauce.

Step 4

Let’s get the vegetables ready for the fried rice. Wash and prepare the onion, zucchini, red and yellow bell peppers, the firm potatoes and carrots, and the fragrant chives.

Step 5

Finely dice all the prepared vegetables into small, uniform pieces for easy cooking in the fried rice. For harder vegetables like potatoes and carrots, dicing them slightly smaller will ensure they cook through evenly.

Step 6

Heat 1 Tbsp of vegetable oil in a pan over medium-high heat. Add the beef and stir-fry until it’s nicely browned on all sides. Searing the beef quickly helps to lock in its juices, keeping it tender and flavorful.

Step 7

Strain the teriyaki sauce, removing the solids like green onion, peppercorns, and cloves, leaving just the smooth sauce. (If you omitted these aromatics, you can skip this straining step). Straining the sauce ensures it coats the fried rice evenly without any large pieces. Tip: You can use regular ground pepper instead of whole peppercorns, and omitting the cloves and fruit is perfectly fine if you prefer a simpler flavor profile.

Step 8

Pour the prepared teriyaki sauce over the browned beef and mix well. Now, add the vegetables that require longer cooking times first: the potatoes and carrots. Follow with the onions, which add a wonderful sweetness when cooked. Stir in 2 Tbsp of mirin at this stage to eliminate any gamey odor from the beef and enhance the overall aroma.

Step 9

Add the zucchini and continue to stir-fry until everything is well combined and the sauce begins to thicken. Cook over medium-high heat, allowing the teriyaki sauce to reduce and coat the ingredients. The slight sauciness that forms should be reduced until it’s rich and clings to the ingredients, making the dish incredibly flavorful.

Step 10

Towards the end of cooking, add the colorful bell peppers and the fresh chives. Stir-fry briefly over high heat, just enough to warm them through while retaining their crisp texture. The sizzling sound signals that the dish is almost ready and is sure to whet your appetite!

Step 11

Now, add 2 bowls of freshly cooked, warm rice to the pan. Drizzle in 1 Tbsp of sesame oil for an extra nutty aroma. Use your spatula to gently break up any clumps of rice and toss everything together until the rice is evenly coated with the teriyaki sauce and ingredients. Continue stir-frying until everything is well mixed, creating a delectable Beef Teriyaki Fried Rice.

Step 12

Serve the delicious Beef Teriyaki Fried Rice generously. Thanks to the abundance of vegetables, this recipe yields about 3 servings. Enjoy a delightful meal with this visually appealing and incredibly tasty Beef Teriyaki Fried Rice!
