How to Make Delicious Beef Gochujang Rice Balls with Perilla Leaves

Rice Ball Ingredients
- 1 bowl of warm cooked rice
- Pinch of salt
- 1 tsp sesame oil
- 1 tsp black sesame seeds
- 4 perilla leaves (shiso leaves)
- 100g minced beef
- 1/2 onion
- 1 Cheongyang chili pepper (adjust to spice preference)
Beef Gochujang Seasoning
- 1 Tbsp gochujang (Korean chili paste)
- 1 tsp granulated sugar
- 1 tsp oligosaccharide
- 1 tsp gochugaru (Korean chili flakes)
- 1 tsp water
- 1 tsp mirin (or cooking wine)
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1 tsp toasted sesame seeds
- 1 Tbsp gochujang (Korean chili paste)
- 1 tsp granulated sugar
- 1 tsp oligosaccharide
- 1 tsp gochugaru (Korean chili flakes)
- 1 tsp water
- 1 tsp mirin (or cooking wine)
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
Finely mince the Cheongyang chili pepper after removing the stem and seeds. Finely mince the onion to a similar size. Prepping the ingredients this way will make the cooking process much smoother.
Step 2
Heat a pan over medium heat and add a little cooking oil. Add the minced beef and stir-fry, breaking it up to prevent clumping. Cook until the beef is no longer pink and any raw smell has dissipated.
Step 3
When the beef is about half cooked (the surface has turned white), add the minced onion and continue to stir-fry. Cook until the onion becomes translucent and releases its sweet aroma.
Step 4
Once the beef and onion are nearly cooked through, add the minced Cheongyang chili pepper and minced garlic. Stir-fry for about 1 minute until fragrant. Be careful not to burn the minced garlic by adjusting the heat.
Step 5
Now, add all the beef gochujang seasoning ingredients: gochujang, sugar, oligosaccharide, gochugaru, water, mirin (cooking wine), and black pepper. Stir-fry for another 2-3 minutes, allowing the sauce to coat the ingredients well. Finally, add toasted sesame seeds for a nutty flavor. The sauce will thicken, creating a delicious beef and gochujang stir-fry.
Step 6
In a bowl, combine the warm rice with black sesame seeds, a pinch of salt, and 1 tsp of sesame oil. Gently mix using a spatula or spoon, being careful not to mash the rice grains. Ensure the seasoning is evenly distributed throughout the rice.
Step 7
Take a portion of the seasoned rice and shape it into a round ball. If the rice sticks to your hands, lightly wet them with water or use disposable gloves for easier handling.
Step 8
Wash the perilla leaves and remove the stems. Lay them flat, ready to hold the rice balls. Place one molded rice ball onto each perilla leaf.
Step 9
