Introducing a beef brisket and bean sprout stir-fry recipe that will liven up any meal. The combination of savory beef brisket and crisp bean sprouts is absolutely delightful, appealing to all ages. If beef brisket is a bit pricey, thinly sliced pork belly (daepae samgyeop) makes an excellent substitute for a similarly delicious dish. This recipe yields enough for 1 adult and 2 children, suitable for two meals. All measurements are based on a standard Korean tablespoon (15mL).

Step 1
1. Stir-fry the Beef Brisket: First, add the beef brisket to a pan over low heat and cook slowly. Beef brisket has a high fat content, so there’s no need to add extra oil. Cooking over low heat prevents the brisket from becoming tough and ensures it cooks to a tender texture. Stir-fry until the pink color of the meat has disappeared.
Step 2
2. Add Bean Sprouts and Seasoning: Once the beef brisket is adequately cooked, add 150g of thoroughly washed bean sprouts, 1 Tbsp of oyster sauce, and 1 Tbsp of Mihyang. Increase the heat to medium-high and stir-fry quickly for about 3 minutes, just until the bean sprouts begin to wilt. It’s crucial not to overcook the bean sprouts, as they can release water and lose their crispness. The goal is to cook them just enough for them to soften slightly.
Step 3
3. Finish with Residual Heat: Immediately after stir-frying, turn off the heat and cover the pan with a lid. Allow the residual heat to finish cooking the bean sprouts completely. This method helps retain the bean sprouts’ crisp texture while ensuring they are cooked through. Serve warm immediately.
