Main Ingredients
- 1 Squid (fresh or thawed)
- 1/2 Onion (medium-sized)
- A pinch of Carrot (about 1/4 medium carrot)
- A bit of Green Onion (about half a stalk)
Soy Glaze Ingredients
- 2.5 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 0.5 Tbsp Sugar
- 0.5 Tbsp Corn Syrup (or Oligosaccharide)
- 1 Tbsp Cooking Wine (Mirin or Sake)
- A pinch of Black Pepper
- 0.5 Tbsp Toasted Sesame Seeds (or Sesame Powder)
- A drizzle of Sesame Oil (about 1 tsp)
- 2.5 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 0.5 Tbsp Sugar
- 0.5 Tbsp Corn Syrup (or Oligosaccharide)
- 1 Tbsp Cooking Wine (Mirin or Sake)
- A pinch of Black Pepper
- 0.5 Tbsp Toasted Sesame Seeds (or Sesame Powder)
- A drizzle of Sesame Oil (about 1 tsp)
Cooking Instructions
Step 1
First, clean and prepare the squid. Cut it into bite-sized pieces (about 1 cm wide). Peel and thinly slice the onion. Peel the carrot and slice it thinly, either flat or julienne style.
Step 2
In a bowl, combine 2.5 Tbsp soy sauce, 1 Tbsp minced garlic, 0.5 Tbsp sugar, 0.5 Tbsp corn syrup, and 1 Tbsp cooking wine. Add a pinch of black pepper and 0.5 Tbsp toasted sesame seeds. Whisk all the sauce ingredients together thoroughly to create a flavorful soy glaze.
Step 3
Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the sliced onions and carrots first, and stir-fry them until they soften and release their sweetness.
Step 4
Once the onions become translucent (or semi-translucent), add the prepared squid to the pan. Stir-fry the squid over high heat for a short time to keep it tender and prevent it from becoming tough. Cook until the squid turns white and starts to curl.
Step 5
When the squid is almost cooked, pour all the prepared soy glaze from step 2 into the pan. Continue to stir-fry over high heat, ensuring the sauce coats the squid and vegetables evenly.
Step 6
As the sauce thickens and becomes slightly saucy, add the diagonally sliced green onions. Finish by drizzling in a bit of sesame oil for extra aroma and flavor. Your delicious soy-glazed squid is ready!
Step 7
Serve the cooked soy-glazed squid generously over a bowl of warm rice. Spooning some of the savory sauce over the rice makes it even more delicious. You can also add a fried egg on top for an extra treat.
