Step 1
Begin by trimming any yellow or wilted leaves from the spinach. Gently clean the root ends and make a cross-shaped incision at the base of the roots. This helps the spinach cook evenly and absorb the seasoning better.

Bring a generous amount of water to a rolling boil in a pot. Add half a tablespoon of salt to the boiling water. Carefully add the prepared spinach and blanch it very briefly, just until the leaves wilt, about 30 seconds to 1 minute.
