Special Sauce
  • 1 Tbsp Gochujang-based Chili Paste (Ssamjang-style, or homemade gochujang)
  • 1 Tsp Ssamjang (Korean soybean paste – for added depth)
  • 0.5 Tsp Wasabi
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Prepare all the ingredients for today’s dish and have them ready. This preparation step will make the cooking process much smoother.

The star of our dish is the Dolari sashimi, specifically ‘Sekkoshi’. ‘Sekkoshi’ refers to thinly sliced raw fish, including the small bones, which gives it a delightful chewy texture. Ensure the fish is very fresh.

Finely chop the Cheongyang peppers. Thinly slice the garlic. Similarly, thinly shred the lettuce and perilla leaves. Fresh vegetables significantly enhance the flavor of the hwedupbap.

Gently mix all the sauce ingredients in the bowl using a spatula or spoon until well combined. You can use the gochujang provided by a Korean restaurant, but for those making it at home, here’s a simple recipe: Mix 1 Tbsp gochujang, 2 Tbsp plum syrup, 1 Tbsp vinegar, 1 tsp sugar, 1 Tbsp sesame oil, 1 Tbsp sesame seeds, and 1 tsp ssamjang. Add wasabi to taste for an even richer flavor.

Step 7

Place a bowl of warm cooked rice into a wide, deep serving dish. It’s best if the rice isn’t too hot; let it cool slightly.
