Main Ingredients
- 1 kg Pork Ribs
- 1/2 head Aged Kimchi (well-fermented)
- 1 stalk Green Onion
- 3 Cheongyang Peppers (or similar hot peppers)
- 1 Red Pepper
- 1 Onion
Pork Rib Marinade
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Joseon Ganjang (traditional soy sauce)
- 2 Tbsp Saenggang-sul (ginger wine or cooking wine)
- 1 Tbsp Maesil Cheong (plum syrup)
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper
Kimchi Stew Seasoning
- 3 cups Kimchi Broth
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Maesil Cheong (plum syrup)
- 2 Tbsp Mirin (or cooking wine)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Joseon Ganjang (traditional soy sauce)
- 2 Tbsp Saenggang-sul (ginger wine or cooking wine)
- 1 Tbsp Maesil Cheong (plum syrup)

Cooking Instructions
Step 1
First, cut the pork ribs into manageable, bite-sized pieces.
Step 2
Soak the cut pork ribs in cold running water for at least 1 hour to remove any blood. This step is crucial for a clean, non-gamey flavor.

Bring a pot of water to a boil. Add the pork ribs and boil for just 2-3 minutes once the water returns to a boil. This brief blanching helps remove impurities.

Drain the blanched ribs and rinse them thoroughly under cold running water. This ensures a clean base for the stew.

In a bowl, combine the rinsed pork ribs with all the ingredients for the pork rib marinade. Gently mix to coat the ribs evenly. Let them marinate for about 30 minutes. Marinating allows the flavors to penetrate the meat.

Thickly slice the onion. Slice the Cheongyang peppers, red pepper, and green onion diagonally. You can adjust the amount of peppers to your spice preference.

Cut off the tough bottom part of the aged kimchi and then cut the kimchi in half. If the pieces are too large, they might not absorb the flavors as well.

In a deep pot, arrange the marinated pork ribs on the bottom.

Layer the aged kimchi over the pork ribs. Pour the prepared kimchi stew seasoning mixture evenly over everything.

Bring the stew to a boil over high heat, then reduce the heat to medium-low, cover, and simmer for about 30 minutes, or until the pork ribs and kimchi are tender. Add the sliced onion, peppers, and green onion during the last 5 minutes of cooking, and simmer for a bit longer. Be careful not to overcook the vegetables, as they can become mushy.
