  • 7 frozen dumplings
  • 1 handful of joraengi tteok (small, ring-shaped rice cakes, approx. 150g)
  • 1 liter rice water (approx. 4 cups)
  • 1 Tbsp tuna extract (or fish sauce)
  • 1 tsp minced garlic
  • 1 handful of green onions (approx. 20g)
  • Pinch of black pepper

  • A few pine nuts (for garnish)
  • A few jujubes (optional)

Cooking Instructions

Step 1

Prepare 5 tablespoons of pine nuts. Using ‘hwangjat’ (unpeeled pine nuts) instead of ‘baekjat’ (peeled pine nuts) will yield a more intense and nutty flavor, allowing you to fully appreciate the natural taste of the pine nuts.

Step 2

In a blender, combine 1 liter of rice water with half a cup of the prepared pine nuts (about 2.5 tablespoons worth). Blend until smooth. Ensure the pine nuts are finely ground to release their rich flavor into the rice water.

Step 3

Pour the blended pine nut mixture into a pot and bring it to a simmer over medium heat. Once simmering, reduce the heat to low and let it cook gently.

Step 4

While the pine nut broth is simmering, add 1 tablespoon of tuna extract and 1 teaspoon of minced garlic to season the soup. Tuna extract adds a savory depth, but you can substitute it with Korean soy sauce if preferred.

Rinse the joraengi tteok lightly under cold water to prepare them. This prevents them from sticking together.
