How to Make Deep and Flavorful Anchovy Broth at Home
When you crave a hearty and savory anchovy noodle soup, this rich anchovy broth is perfect! It adds depth to noodle dishes and various soups.
Broth Ingredients
- 1 handful of dried anchovies (for broth)
- 1/2 onion (with peel)
- 1 stalk of green onion (white part mainly)
- 4 pieces of dried kelp (about 10cm x 10cm)
- 1 piece of radish (about 5cm)
- 3 liters of water
Cooking Instructions
Step 1
First, prepare all ingredients for the broth. Thoroughly wash them. It’s important to include the onion peel, as it adds depth of flavor and a beautiful color to the broth. Use the white parts of the green onion and cut the radish into manageable pieces.
Step 2
Removing any fishy smell from the anchovies is key. You can lightly toast the anchovies in a dry pan or microwave them for about 1 minute. If using a microwave, keep a close eye on them after 40 seconds to prevent burning. Once microwaved and slightly cooled, combine the prepared ingredients with 3 liters of water in a pot. Bring to a boil over high heat.
Step 3
As soon as the water begins to boil, remove the dried kelp. Boiling kelp for too long can impart a bitter taste. Reduce the heat to medium-low, cover the pot, and let it simmer gently for about 30 minutes. This slow simmering allows the flavors from all ingredients to infuse deeply into the water.
Step 4
After 30 minutes, strain the broth through a fine-mesh sieve or cheesecloth for a clear, concentrated anchovy broth. You’ll notice the rich color and authentic flavor, achieved without any added soy sauce or seasonings. This versatile broth is perfect for enhancing your favorite noodle soups, stews, and hot pot dishes.
