Cooking Instructions
Step 1
First, pat the surface of the steak dry with paper towels to remove any excess blood. This step is crucial for a clean taste without any gamey odors. Then, generously season both sides of the steak with coarse sea salt and ground basil. Let it sit for at least 10 minutes to allow the meat to tenderize and flavors to meld.
Step 2
While the steak is resting, prepare your side vegetables. Slice the carrot thinly, cut the broccoli into florets, and have your cabbage leaf ready. These will be roasted alongside the steak. Arrange the vegetables on an oven-safe pan or pizza pan and roast in a preheated oven at 200°C (400°F) for about 10-15 minutes, or until lightly browned. The roasted vegetables will develop a slight sweetness that complements the steak beautifully.
Step 3
Now, it’s time to get your pan smoking hot. Add a generous amount of cooking oil to your skillet and heat it over high heat until it just begins to shimmer or lightly smoke. A screaming hot pan is key to searing the steak quickly, locking in all those delicious juices.
Step 4
Carefully place the seasoned steak into the hot pan. Sear each side over high heat for about 1-2 minutes, until a beautiful brown crust forms. Once one side is nicely seared, flip the steak, sprinkle the other side with a bit more salt and basil, and sear. This initial high-heat sear is vital for minimizing juice loss.
Step 5
Don’t forget to sear the sides of the steak as well. Tilt the pan and hold the steak on its sides for about a minute each, ensuring even browning on all surfaces. Paying attention to all sides will result in a more perfectly cooked steak.
Step 6
Once the steak has a beautiful crust on all sides, transfer it to an oven-safe skillet or a cast-iron pan (if not already using one). This pan will go into the oven to finish cooking the steak gently.
Step 7
Place the steak in a preheated oven at 250°C (480°F) and roast for approximately 15 minutes. The cooking time can be adjusted based on the thickness of your steak and your desired doneness (rare, medium, well-done). The oven’s steady heat will cook the inside evenly, ensuring a tender texture.
Step 8
Remove the steak from the oven and set it aside to rest on a plate. In the same pan used for searing the steak (careful, it’s hot!), add your prepared carrots, broccoli, and cabbage leaf. Sprinkle them with a bit more salt and basil, and sauté them in the flavorful steak drippings. The vegetables will absorb the steak’s essence, making them incredibly tasty.
Step 9
Voila! Your perfectly seared steak with a juicy, tender interior is ready. Just before serving, give it a few grinds of fresh black pepper to enhance its aroma and flavor. Enjoy your restaurant-worthy steak with the warm, sautéed vegetables!
