I also immediately made some kiwi ade with the fresh jam. Kiwi jam is wonderful not only for spreading on toast or mixing with yogurt, but also said to be good for preventing colds when mixed with warm water. For the Kiwi Jam
  • 4 ripe kiwis (approx. 332g)
  • 332g granulated sugar (1:1 ratio with kiwis)
  • 1 Tbsp fresh lemon juice

For the Kiwi Ade
  • 5 Tbsp homemade kiwi jam
  • 1 cup (200ml) cold sparkling water
  • 1 cup ice cubes

Cooking Instructions

Step 1

First, wash the 4 kiwis you’ll use for the jam thoroughly under running water. Pat them dry with a paper towel, then trim off the ends and peel the skin thinly. Once peeled, place the kiwis on a scale to measure their exact weight. (For this recipe, it was about 332g.)

Step 2

Place the peeled and weighed kiwis on a cutting board. Using a peeler or a knife, finely chop the kiwis. You can dice them into small cubes or mince them finely. For a bit of texture, chop them slightly larger; for a smoother consistency, mince them very finely.

Step 3

Transfer all the finely chopped kiwis into a clean bowl. The weight of these kiwis was exactly 332g. Looking at the chopped kiwi in the bowl, its vibrant green color and the speckles of seeds make it look wonderfully refreshing.

Step 4

The key to great kiwi jam is the ratio with sugar! We’ll add an equal weight of sugar to the kiwis. If your kiwis weighed 332g, add 332g of sugar, sprinkling it evenly over the chopped kiwis. Using white sugar will give a clean sweetness, while brown sugar will add a subtle caramel note. Choose according to your preference.

Step 5

Now it’s time to add lemon juice to enhance the tangy flavor and help preserve the jam. Drizzle 1 tablespoon (about 15ml) of fresh lemon juice over the mixture of kiwi and sugar. If fresh lemon isn’t available, bottled lemon juice works too.

Step 6

Using a spatula or spoon, gently mix the kiwis, sugar, and lemon juice in the bowl. Gently rub the kiwi pieces with the sugar, almost like an exfoliation. Initially, you’ll see sugar granules, but as time passes, the kiwi’s moisture will dissolve the sugar, creating a thick syrup. It’s important to mix well until all the sugar has dissolved.

Step 7

Transfer the prepared kiwi mixture into a clean, sterilized glass jar. Make sure to include all the syrup that has formed along with the kiwi pieces. And just like that, your delicious homemade kiwi jam is complete! Seal the jar tightly and store it in the refrigerator. Letting it chill for at least a day will allow the flavors to meld beautifully.

Step 8

Now, let’s make a refreshing kiwi ade with the fresh jam! Add about 5 tablespoons of your homemade kiwi jam to a clear glass. You can adjust the amount of jam according to your taste. Add more for a richer sweet and sour flavor, or less for a milder taste.

Step 9

Fill the glass with kiwi jam generously with ice cubes. Then, pour cold sparkling water to the brim. The fizziness of the sparkling water combined with the tartness of the kiwi makes it incredibly delicious. Be sure to use sparkling water, not still water, to achieve the authentic ade taste.

Step 10

Finally, give it a gentle stir with a spoon or straw, and your sweet, sour, and incredibly refreshing kiwi ade is ready! Enjoy this wonderful homemade cafe-style drink with ease. You can use the remaining kiwi jam in warm water for a soothing drink, or pair it with yogurt or toast for deliciousness throughout the week.
