Main Ingredients
- Sea Mustard (Tot) 150g (salted or fresh)
Tangy Dressing
- Gochujang (Korean chili paste) 1 Tbsp
- Vinegar 1 Tbsp
- Sugar 2/3 Tbsp
- Anchovy Sauce 1 tsp
- Sesame Seeds (toasted, ground) 1 Tbsp
- Minced Garlic 1/2 Tbsp
- Sesame Oil 1 tsp
- Gochujang (Korean chili paste) 1 Tbsp
- Vinegar 1 Tbsp
- Sugar 2/3 Tbsp
- Anchovy Sauce 1 tsp
- Sesame Seeds (toasted, ground) 1 Tbsp
- Minced Garlic 1/2 Tbsp
- Sesame Oil 1 tsp
Cooking Instructions
Step 1
If using salted sea mustard, soak it in cold water for about 10 minutes to gently reduce its saltiness. Fresh sea mustard can be used directly without this step.
Step 2
Blanch the prepared sea mustard in boiling water for a very brief period, about 10 seconds. Be careful not to overcook, as it can become mushy.
Step 3
Immediately rinse the blanched sea mustard under cold running water to cool it down. Then, squeeze out as much excess water as possible by hand. Thoroughly draining is key to allowing the dressing to absorb well and maintain a crisp texture.
Step 4
If the strands of sea mustard are too long, chop them into bite-sized pieces. Cutting them into manageable lengths will make them easier to eat.
Step 5
Place the sea mustard in a mixing bowl. Add all the dressing ingredients except for the sesame oil: gochujang, vinegar, sugar, anchovy sauce, ground sesame seeds, and minced garlic.
Step 6
Gently mix the ingredients with your hands, ensuring the dressing coats the sea mustard evenly. Drizzle in the sesame oil at the very end for fragrance and flavor. While it’s best enjoyed fresh, if you plan to store it in the refrigerator, add the sesame oil just before serving. Enjoy a healthy and invigorating meal with this delicious sea mustard salad, capturing the fresh taste of the sea!
