For the Tomato Basil Syrup
- 500g cherry tomatoes
- 10g fresh basil leaves
- 30g lemon juice (approx. 2 Tbsp)
- 500g sugar (granulated or caster)
Cooking Instructions
Step 1
Begin by sterilizing the glass jar you’ll use for storage. You can do this by boiling it in water for about 5 minutes, or by heating it in the microwave with a bit of water for 2-3 minutes. Ensure the jar is completely dry before use.
Step 2
Wash the cherry tomatoes thoroughly under running water and pat them dry. Gently wash the fresh basil leaves and shake off any excess water.
Step 3
Remove the stem ends from the cherry tomatoes. Make a shallow cross-shaped score on the bottom of each tomato (opposite the stem end). This will make peeling much easier.
Step 4
Carefully place the scored cherry tomatoes into boiling water for approximately 30 seconds to 1 minute. Be careful not to overcook them, as they can become too soft.
Step 5
Immediately transfer the blanched tomatoes to a bowl of ice-cold water to stop the cooking process. Once cooled, gently peel the skin off, starting from the scored end. The skins should slip off easily.
Step 6
Place the peeled cherry tomatoes and the fresh basil leaves into the sterilized glass jar. You can layer them for a visually appealing presentation.
Step 7
Pour the lemon juice over the tomatoes and basil, followed by the sugar. The sugar will help draw out the moisture from the tomatoes to create the syrup.
Step 8
Gently stir the mixture to combine, ensuring the sugar is evenly distributed. Seal the jar with a lid and refrigerate for about 1 to 2 weeks to allow the flavors to meld. The syrup will deepen in flavor and aroma as it matures!
