Cooking Instructions
Step 1
Begin by thoroughly washing the grapefruit under running water to remove any dirt or residue from the peel.
Step 2
Trim off the top and bottom ends of the grapefruit. Stand it upright and carefully make a shallow incision about 1 cm deep with a knife, slicing downwards along the curve of the fruit. This will make peeling easier.
Step 3
Gently peel the grapefruit following the score line. It’s best to remove the white pith (albedo) as thinly as possible, as it can impart a bitter taste.

Once peeled, halve the grapefruit and meticulously remove all seeds, both large and small, using tweezers or the tip of a knife. Leaving seeds in can be unpleasant when eating.

Carefully separate the grapefruit segments (arils) and place them in a bowl, being gentle to avoid crushing the pulp.

Prepare sugar equivalent to the weight of the separated grapefruit pulp. The ratio of grapefruit to sugar should be 1:1. (For example, if you have 300g of grapefruit pulp, use 300g of sugar). You can use white sugar, brown sugar, or unrefined sugar based on your preference.

Add the sugar to the bowl containing the grapefruit pulp. Using a spatula or spoon, gently mix everything together until the sugar is evenly distributed and dissolved. Stir carefully to avoid breaking down the grapefruit segments.

Ensure the glass jar you’ll use for storage is sterilized by boiling in water and completely dried. Then, carefully transfer the prepared grapefruit marmalade into the sterilized jar. Leave a little headspace at the top.

While you can enjoy the marmalade immediately, refrigerating it for at least 3-4 days will allow the flavors to meld beautifully, resulting in a richer and more profound taste. If you’re short on time, even a day’s rest will improve the flavor.
