Cooking Instructions
Step 1
First, thinly slice the onion, aiming for a thickness of about 0.2cm. Slicing the onion thinly allows its natural sweetness and moisture to infuse into the meat while marinating, resulting in a richer, sweeter flavor.

To ensure the delicious marinade penetrates deeply, make diagonal cuts into the pork neck. These cuts help the marinade soak in better and make the meat more tender when cooked.

In a bowl, combine 4 Tbsp Jinmi soy sauce, 2 Tbsp Kikkoman Teriyaki Sauce, 2 Tbsp honey, 1 Tbsp brown sugar, 1 tsp sesame oil, 1 tsp minced garlic, and 1 cup red wine. Whisk until well combined to create the flavorful marinade. (Using teriyaki sauce along with soy sauce adds a wonderfully deep flavor!) In a suitable container, layer the thinly sliced onions at the bottom, then add the scored pork neck. Pour the prepared marinade evenly over the meat and onions, layering them as you go for optimal flavor distribution.

Once you’ve poured the marinade over the meat, cover the container tightly with plastic wrap. This prevents the marinade from leaking and prepares the meat for effective marination.
