Cooking Instructions
Step 1
First, wash and prepare all the vegetables for your curry. Dice the zucchini, carrot, onion, and potato into bite-sized pieces, about 1cm cubes. This size is perfect for eating and makes the curry visually appealing. It’s helpful to separate the harder vegetables like potatoes and carrots from softer ones like onions and zucchini, as this allows for better control over cooking times.

Next, let’s make the delicious curry sauce. In a bowl, combine 200ml of curry powder (measured with a measuring cup) and 600ml of water. Stir well until there are no lumps. Pre-mixing the curry powder with water prevents clumps and ensures a smooth, velvety curry texture when cooked. Continue stirring until the mixture is uniformly colored.
Step 3
Now, let’s start sautéing! Lightly grease a deep pan with cooking oil. Add the harder vegetables, such as potatoes and carrots, first, and sauté them over medium heat. Cook until they are about 60% done. Keep the pan moving or stir occasionally with a spatula to prevent sticking or burning.

Once the harder vegetables are partially cooked, add the chopped onion to the pan and sauté along with them. Stir-fry until the onions become translucent. This process brings out their natural sweetness, which will greatly enhance the curry’s overall flavor. You don’t need to cook them until deeply caramelized.

Finally, pour the pre-mixed curry sauce into the pan and bring it to a boil over high heat. Once it starts boiling, reduce the heat to low and let it simmer gently, allowing the sauce to thicken to your desired consistency. Continue simmering until all the vegetables are perfectly tender (100% cooked). Your delicious curry is now ready! Serve hot with rice and enjoy.
