Stumbled upon some pork gabbri-sal in the fridge that seemed a bit past its prime? Eating it as-is might feel iffy, but throwing it away feels like such a waste. This recipe is your solution! A liberal amount of wine sauce expertly masks any subtle off-odors and transforms the flavor, turning that reluctant cut of meat into a delicious steak. Of course, if you start with fresh gabbri-sal, the taste will be even more spectacular!

For the Steak
  • Pork (Gabbri-sal) 200g
  • Olive oil, as needed
  • Salt, to taste
  • Black pepper, to taste
  • MSG (optional), to taste
  • Dried basil, to taste
  • Onion 1/10, thinly sliced
  • Garlic 1-2 cloves, thinly sliced or minced
  • Dried chili pepper 1 (optional, for a touch of heat)

For the Wine Sauce
  • Red wine 100-150ml
  • Onion 1/10, finely minced
  • Garlic 1-2 cloves, finely minced
  • Bay leaf 1
  • Cornstarch 1 Tbsp
  • Sugar 1 Tbsp
  • Corn syrup 1 Tbsp

Cooking Instructions

Step 1

First, prepare the marinade for the pork steak. Mix salt, black pepper, and MSG (optional) in a 1:1:1 ratio. This basic marinade is excellent for any cut of pork, effectively neutralizing any gamey odors.

Step 2

Rub the marinated pork (gabbri-sal) with 1 tsp of the prepared marinade, 1 tsp of dried basil, and a generous drizzle of olive oil. Gently massage the ingredients into the meat and let it rest for 5-10 minutes. This allows the pork to absorb the flavors, resulting in a more tender and flavorful steak.

Step 3

Before searing the steak, heat some olive oil in a pan over low heat. Add the thinly sliced onion, sliced garlic, and dried chili pepper (if using). Let them gently sauté until fragrant. Once the aromatics start releasing their scent, your pan is ready for searing.

Step 4

Increase the pan heat to high. Place the marinated pork into the hot pan and sear it until golden brown on all sides. It’s crucial to sear quickly over high heat for about 1-2 minutes per side to lock in the juices. The rendered fat will add richness to the steak.

Step 5

Once the steak is partially cooked, add a knob of butter to the pan and let it melt. The butter will add a wonderful richness. Now, line your air fryer basket with aluminum foil and place the steak inside. Air fry at 150-180°C (300-350°F) for 5 minutes per side, for a total of 10 minutes (two 5-minute cycles). Flipping it halfway through ensures even cooking.

Step 6

While the pork is in the air fryer, let’s make the delicious wine sauce. Heat a separate pan and melt the sugar until it caramelizes. Then, add the minced onion, minced garlic, bay leaf, and red wine. Bring to a simmer and let it cook until the alcohol aroma dissipates and the flavors meld together.

Step 7

Once the red wine has reduced by about half, prepare a slurry by mixing 1 Tbsp of cornstarch with 1 Tbsp of water until smooth. Gradually whisk this mixture into the simmering sauce until it thickens to your desired consistency. Once thickened, remove from heat. Your smooth and rich wine sauce is ready.

Step 8

Arrange the perfectly cooked pork steak on a serving plate. Generously pour the warm, flavorful wine sauce over the steak. Ensure the sauce coats the entire piece of meat for maximum deliciousness.
