- 1 Tbsp cooking oil
- A pinch of salt (to taste)
- 3 Tbsp Cheongju (rice wine/mirin) (to remove fishy odor from roe)
Cooking Instructions
Step 1
First, to remove any potential fishy odor and soften the flying fish roe, soak it in 3 Tbsp of Cheongju (rice wine or mirin) for about 10 minutes. This step enhances the roe’s flavor and texture.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the finely diced onion and sauté for about 2-3 minutes until it becomes translucent. Sautéing the onions well brings out their natural sweetness, enriching the flavor of the fried rice.

Once the onions are somewhat cooked, add the finely chopped kimchi. Stir-fry for about 3-4 minutes until the kimchi softens and becomes fragrant. It’s important to cook off excess moisture from the kimchi to prevent the fried rice from becoming mushy.
